Makes a great side for any kind of meat of fish!
Ingredients:
2 acorn squash, cut in halves, seed and strings removed
4 t. lime juice
4 t. applesauce, unsweetened
4 t. tamari
1 clove garlic, minced
2 t. grated fresh ginger root
Directions:
1. Preheat oven to 400 degrees
2. Place squash halves cut side down on baking dish filled with 1/2 water.
3. Remove dish from oven and turn squash cut side up.
4. In a small bowl stir together remaining ingredients.
5. Spoon mixture into squash cavities.
6. Return to oven and bakre15 more minutes.
7. Enjoy.
