This is a standard AIOLI with cheese added. It can be made with Romano or Parmesan, too.
Ingredients:
5 cloves garlic
1 egg
1 tablespoon lemon juice
1 cup olive oil
1/4 cup grated asiago cheese
Directions:
1. Crush the garlic.
2. Add the egg and put in blender.
3. Very slowly add the oil in a thin stream through the top of the blender, and stop blending when the oil has all been added.
4. Add cheese and blend just long enough to combine well.
5. Whisk in lemon juice by hand (Vinegar may be substituted).
