My daughter, Ashley, absolutely loves crepes. She has ever since she was just a little girl and now she is sixteen and this recipe is still her favorite for a comfort food. Whenever I know she has had a rough week at school, I will make these for her. Read more . She does eat them filled with everything sweet and sugary. . .with the crepes rolled around butter and whipping cream and then sprinkled with vanilla powdered sugar =D
Ingredients:
2 eggs
1 c. milk
1/2 t. salt
1 t. sugar
1 c. flour
2 t. melted butter
Directions:
1. Beat the eggs well, then beat in the milk, salt, flour, sugar and butter. (Or mix all the ingredients in a blender until smooth.) Cover and let stand for at least 30 minutes. Heat a 7-inch or 5-inch skillet or crepe pan until moderately hot, them film it with butter or shortening, using a brush or folded paper towel. Using a ladle or small cup, pour in several tablespoons of batter, then quickly tilt the pan so that the batter spreads out. Cok till lightly brown, then loosen edges and flip it over.
2. **Add what ever type of fruit or meat filling and drizzle syrup or sprinkle powdered sugar over the top =D
