Ingredients:
1 cup couscous |
2 tablespoons olive oil |
1 clove garlic, thinly sliced |
1 5-ounce package arugula |
kosher salt and pepper |
Directions:
1. Cook the couscous according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring, for 1 minute. Add the arugula and cook until just wilted. Transfer to a large bowl. Add the couscous, 1/2 teaspoon salt, and 1/4 teaspoon pepper and stir to combine. |
