Ingredients:
2 cups baby arugula
1/4 cup dried tart cherry
1/2 red bell pepper, sliced into thin strips
1 ounce goat cheese, crumbled
2 hard-boiled eggs, sliced
2 tablespoons honey mustard dressing (simple honey mustard salad dressing or use newman's own lighten up honey mustard dressing)
Directions:
1. Toss together arugula, cherries, and bell pepper strips; top with cheese and sliced eggs.
2. Drizzle with dressing.
