You got me: I don't know where I got this recipe... But it is among our favorites. DELICIOUS!
Ingredients:
2 tablespoons oil
1 teaspoon lemon juice
1 cup chickpeas, drained and rinsed
1 cup cooked rice
1 (6 1/2 ounce) jar marinated artichoke hearts, drained and quartered
1 medium ripe avocado, peeled and chopped
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1 medium tomato, chopped
salt and pepper
Directions:
1. In a large bowl combine oil and lemon juice.
2. Stir in remaining ingredients. (PS: I don't like peppers, so I don't use.).
3. Cover and chill before serving.
