Ingredients:
1 lb whole wheat spirals (or other pasta)
1 onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
1 lb. firm tofu, diced
14 oz artichoke hearts, cut up
24 oz diced tomatoes
16 oz tomato sauce
Directions:
1. Cook pasta as directed
2. Saute onion & garlic in oil for 3-4 min
3. Add diced tofu and saute about another 5 min
4. Add artichoke, tomatoes, and tomato sauce - bring to simmer
5. Toss with pasta
6. ***You can use fresh or canned tomatoes if you add a little tomato paste to fresh tomatoes. You can also use about 4 cups of spaghetti sauce instead of the diced tomatoes & tomato sauce if you prefer.
