Ingredients:
3 jarred artichoke hearts, chopped
1/2 red beet, raw, grated
1/2 carrot, grated
1/4 cup feta
1 cup baby spinach
2 tablespoons vinaigrette
Directions:
1. Mix first 4 ingrediets.
2. Serve on spinach leaves.
3. top with vinaigrette.
