Artichoke and Mushroom Kabobs

These are nice when having guest as they can be made ahead and left to marinate till just before serving. Cook time Not reflecting the time needed for marinating. A basic recipe that is easly added to. Some of the things we have added on occasion are pearl onions, zucchini and bell peppers.
Ingredients:
2 (9 ounce) packages frozen artichoke hearts
1 pint fresh mushrooms
1 pint cherry tomatoes
3/4 cup italian dressing (will need more if adding other veggies)
salt and pepper
Directions:
1. Cook artichoke hearts as directed on package; drain.
2. combine artichoke hearts, mushrooms and dressing.
3. Cover and let stand about 4 hours at room temperature or overnight in the refrigerator.
4. If broiling preheat broiler.
5. Alternately thread artichoke hearts and mushrooms on skewers with cherry tomatoes. Broil or grill about 5 to 6 minutes, basting occasionally with dressing. Season with salt and pepper.
6. Serve hot with additional dressing.
