Arroz con Pollo
Ingredients:
1 lb chicken breast
2 cloves of garlic, minced
2 tomatoes, peeled and diced
1 green bell pepper
2 tsp salt
1 1/2 cups white rice, uncooked
3 cups boiled water
1/4 cup onion
1 tbsp cilantro
1 cup cheese
1 tbsp lime juice
Directions:
1. In a large frying pan, sautee chicken and onion in garlic, salt and lime juice until mostly cooked.
2. Add the rice and boiling water. Stir all ingredients.
3. Add the peppers, tomato, cilantro and cheese.
4. Cook for 30 minutes.
