Like rice pudding, but not pudding... more like rice with the consistency and sweetness of oatmeal.
Ingredients:
1 cups uncooked rice
2 1/2 cups water
1 can evaporated milk
2 tbsp ground cinnamon
2 tbsp vanilla or vanilla flavoring
3 tbsp flax seed (ground in food processor or blender)
1/2 cup sugar
Directions:
1. Boil rice in water until cooked. (normal white rice preparation)
2. Add the rest of the ingredients and return to a boil.
3. Stir constantly until mixture almost reaches desired consistency and remove from heat. (It will thicken a little bit when it cools.)
