Arnold's Apple Pie

From the children's book The Seasons of Arnold's Apple Tree by Gail Gibbons ISBN 0-15-271246-1. Delicious!
Ingredients:
1 3/4 cups all-purpose flour
1 teaspoon salt
1/3 cup butter
1/3 cup ice water
6 -8 apples
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Directions:
1. Sift flour and salt into a mixing bowl.
2. Add butter and mix.
3. Sprinkle ice water on top of mixture and mix until you can make a ball of dough.
4. Cut the ball in half.
5. Take one half and roll it out on a piece of wax paper to form a circle 1/8 inch thick. Smooth it into a 9 inch pie pan and trim the edges.
6. Slice apples, removing seeds and centers.
7. Put the slices into the pie pan.
8. Mix brown sugar, salt, cinnamon and nutmeg. Sprinkle mixture of the apples.
9. Roll out the other half of the dough as before.
10. Smooth it over the apples.
11. Pinch down the edges and trim off the extra dough.
12. Poke a few tiny holes in the top of the dough.
13. Bake for 50 minutes at 425 degrees F.
