Armenian Lentil Soup

A really healthy soup.
Ingredients:
3t canola oil
1lg onion, chopped
3 garlic cloves, minced
1t ground cumin
1/2t coriander
1t hungarian paprika
6c chicken stock
11/2c dried lentils, rinsed and drained
20 oz. frozen spinach, thawed
29 oz. tomatoes, chopped
salt
pepper
4t lemon juice
Directions:
1. Put oil, onion, garlic , cumin, coriander, and paprika. Saute for 5 minutes.Then add the chicken stock.
2. Add the lentils, spinach, tomatoes and bring to a boil.
3. Reduce the heat to low, season with salt and papper, and simmer, covered, until the lentils are tender, about 50 minutes.
4. Season with the lemon juice and additional salt and pepper, if needed.
5. Let sit for 5 minutes before serving.
