A really great way to dress up green beans and give them a smoky bacon and spicy flavor.
Ingredients:
1 pound fresh green beans, cut into 1-inch pieces
4 slices bacon, cut into 1 inch pieces
1 medium onion, chopped (1/2 cup)
1 medium tomato, chopped (3/4 cup)
1 clove garlic, finely chopped
1 teaspoon chopped fresh or 1/2 tsp dried oregano leaves
1/2 teaspoon salt
dash of pepper
2 tablespoons lemon or lime juice
Directions:
1. Place beans in 1 inch water in 2-quart saucepan. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender. Drain. Immediately rinse with cold water. Drain.
2. Cook bacon in 10-inch skillet over medium-high heat until crisp. Remove bacon from skillet reserving 1 tablespoon fat in skillet. Drain bacon on paper towels.
3. Cook onion in bacon fat over medium heat, stirring occasionally until tender. Stir in tomato, garlic, oregano, salt and pepper. Simmer uncovered 5 minutes. Stir in beans and heat through. Drizzle with lemon juice. Garnish with crispy bacon pieces.
