Arizona's Granny Smith Salad

Copycat version
Ingredients:
2 cups field greens
1/4 cup gorgonzola
1/4 cup spiced pecans
1 granny smith apple, peeled, cored, and julienned
1/2 cup red grapes
5 tablespoons red wine vinegar
1 shallot, minced (about 2 tablespoons)
1 tablespoon dijon mustard
1/4 teaspoon sea salt
1/4 teaspoon fresh ground pepper
2 tablespoons extra virgin olive oil
Directions:
1. Dressing.
2. Combine vinegar and next 4 ingredients in a medium bowl. Slowly whisk in oil until well blended. Use immediately, or store in an airtight container in the refrigerator until ready to use; bring to room temperature, and stir or shake to mix.
3. Salad.
4. Mix greens, cheese, pecans, apples, and grapes together. Toss.
5. Pour vinegarette over salad.
