We've got the mexican and western flare in this dish. I get cravings for this soup and it's an easy one to make. You can double it and simmer in the crock pot for game nights, movie nights or race days! Corn bread goes well with this one.
Ingredients:
3 tablespoons butter
1 cup chopped yellow onion
1 clove minced garlic
1/2 cup all purpose flour
i package taco seasoning mix
2 cups milk
1/4 cup water
1 chicken bullion cube
10 pieces crispy fried bacon (i cook the bacon in the microwave)
1 can great northern beans (undrained)
2 cans pinto beans (undrained)
1 can (4oz) diced green chiles
2 tablespoons picante sauce
1 1/2 cups shredded cheddar cheese (for topping)
1/2 cup shredded pepper jack cheese (for topping)
Directions:
1. Microwave bacon (if you don't have the bacon ready)
2. Saute onion and garlic in the butter until soft in large pan or dutch oven
3. Sprinkle flour and taco seasoning over sauteed onion and garlic and mix well
4. Add remaining ingredients - EXCEPT the cheese
5. Bring to a slow boil while stirring
6. Reduce heat to low and simmer at least 30 minutes
7. Top individual bowls with shredded cheeses
8. Serve with cornbread
