Slightly spicy green lentils, great side dish. Recipe from Green Cuisine Cookbook, 2006.
Ingredients:
1 1/2 tbsp sunflower oil
3/4 cup onions, diced
1/4 tsp black pepper
1/8 tsp cayenne
1 1/2 cup green lentils
1 1/2 tbsp brown basmati rice
6 cups water
1/4 tsp salt
Directions:
1. Saute the onions for 5 minutes in the oil.
2. Add the spices, lentils and rice and cook with the onions for 5 minutes.
3. Add the water, bring to a boil, then simmer for 45 minutes, add the salt and serve.
