I got this off of Tanya's Sunday Baker blog. Tried it and it is easy and good. It's a good way to use up apricot preserves.
Ingredients:
1-1/3 c. all-purpose flour
2/3 c. sugar
1/2 t. cinnamon
1/2 t. salt
1-1/2 sticks cold, unsalted butter cut into tablespoon sized pieces
2 large egg yolks
1 t. vanilla
1/2 c. apricot preserves
3/4 c. chopped walnuts
Directions:
1. Put oven rack in middle position and preheat to 375 degrees.
2. Butter a 9 square baking pan, line with parchment and then butter the parchment, leaving a slight overhang.
3. In food processor, pulse the flour, sugar, cinnamon, and salt until combined:
4. Add the butter and pulse until mixture resembles coarse meal with some pea-sized butter lumps.
5. Add yolks and vanilla and pulse just until clumps of dough form, about 30 seconds
6. Line pan with parchment paper.
7. Press 3/4 of the dough mixture onto the bottom of the pan. Then spread with the apricot preserves.
8. Crumble remaining dough mixture over preserves and sprinkle evenly with walnuts:
9. Bake until top is golden brown and preserves are bubbling; 20-25 minutes.
10. Let cool completely in pan on wire rack.
11. Lift from pan by grasping both ends of the parchment. Cut into bars.
12. This recipe would be delicious with any flavor of preserves; add a dusting of a cinnamon/sugar mixture over the walnuts before baking.
