Apricot Tea Loaf

Easy loaf to make and yummy to eat - from Australian Table magazine
Ingredients:
150 g chopped dried apricots
125 ml hot brewed tea
125 g butter
110 g caster sugar
1 egg
100 g self raising flour
Directions:
1. Soak apricots in hot tea for 1 hour till tea is absorbed.
2. Preheat oven to 180 degrees.
3. Grease and line loaf pan - 13cms x 25cms.
4. With electric mixer, cream butter and sugar
5. Add egg and beat well.
6. Fold in flour and apricots.
7. Spoon into prepared pan.
8. Bake 40-45 minutes.
9. Cool in tin for 5 minutes then turn onto wire rack to cool.
