A jolly good pudding from the UK, sweet luscious taste treat, just full of apricot flavor.
Ingredients:
10-12 oz mascarpone or mascarpone light
2tbls sugar
1 jar apricots in syrup
250g galbani santa lucia® mascarpone or mascarpone light
50g sugar
1 tin apricots in syrup

less than 30 min
mix the well-drained apricots in the blender with sugar and mascarpone. wet individual moulds with the apricot syrup and pour the mixture in. freeze till serving. garnish with slices of apricots and mint.
