Ingredients:
2 large eggs
1 1/4 c low fat evoparated milk
2 tsp vanilla
1 1/2 c all purpose flour
pinch of salt
2 tbsp white sugar
2 tsp baking pwd
3 tbsp butter or olive oil
filling and garnishing
1 can apricot , cut into fairly medium slices
vanilla ice cream
golden syrup
nutmeg and cinnamon powder
fresh sprigs of mint leaves
Directions:
1. Beat the eggs , milk , vanilla
2. Whisk the flour , salt , sugar , baking pwd
3. Keep in the fridge overnight .
4. Heat a flat pan and pour butter
5. Pour a spoonful of batter and spread evenly into a circle .
6. Flip it and cook on both sides .
7. To Serve
8. Keep some apricot slices in the middle of a warm pancake and roll it .
9. Keep a small scoop of vanilla icecream on top.
10. Drizzle with golden syrup.
11. Sprinkle a pinch of nutmeg and cinnamon powder on top ,
12. and a mint leaf on top .
13. Serve at once .
