I went to a brunch recently and these were served.
Ingredients:
1 c all purpose flour
1 c quick cooking oats
1 tsp salt
1/2 tsp cinnamon
1/4 tsp ground cloves
1 tsp baking soda
6 tbls butter
6 tbls canola oil
3/4 c white sugar - i use half sugar & half splenda
1/2 c brown sugar
2 eggs
1 tsp vanilla
1/2 c dried apricots, diced - any dried fruit will work here
Directions:
1. Preheat oven to 375. Spray a 9x13 with non stick spray - pam.
2. Combine first 5 ingredients in one bowl, set aside.
3. Combine butter through vanilla in another bowl and mix with electric mixer till smooth and fluffy.
4. Add dry ingredients to the wet and mix just till incorporated. Add dried fruit.
5. Spreak mixture evenly into prepared pan, bake for 20-25 min. Cool completely before cutting into bars.
