Apricot Cheese Pie

A wonderful cheese cake or pie that is just a little bit different.
Ingredients:
1 prepared pie shell
1 cp dried apricots
3 eggs
1 tsp lemon juice
3/4 cp sugar
1 tbs flour
1 cp creamed cottage cheese sieved
1/2 cp sour cream
whipped cream or vanilla ice cream
Directions:
1. preheat oven to 425
2. prepare pie shell
3. chop one cp dried apricots and sprinkle on bottom of pie shell
4. combine eggs and lemon juice in a bowl and beat slightly
5. gradually add sugar, flour and salt to egg mixture
6. add sieved cottage cheese and sour cream.
7. Beat until well blended
8. Pour over apricots
9. cover edges of pie with foil strips to prevent from becoming to dark.
10. Bake in a 425 oven 45 minutes or until knife inserted in center comes out clean.
11. Remove from oven and cool on rack.
12. Refrigerate until cold. Serve with either whipped cream or a scoop of vanilla ice cream.
