Gorp is another name for trail mix and makes a great portable snack with lots of fiber. Pack in an individual reusable container, and stash in a purse, backpack, or diaper bag for hunger “emergencies.”
Ingredients:
cooking spray
2 3/4 cups old-fashioned rolled oats
1/2 cup slivered almonds
1/3 cup coarsely chopped walnuts
1/2 cup honey
1/3 cup butter
1/2 cup dried cherries
1/2 cup coarsely chopped dried apricots
1/3 cup golden raisins
Directions:
1. Preheat oven to 350°.
2. Line a jelly-roll pan with foil; coat foil with cooking spray. Combine oats, almonds, and walnuts in a medium bowl. Place honey and butter in a small saucepan. Cook over low heat 3 minutes or until blended and smooth, stirring occasionally. Drizzle honey mixture over oat mixture; toss to coat. Spread mixture in prepared pan.
3. Bake at 350° for 15 minutes; stir. Bake an additional 10 minutes or until lightly browned. Cool completely in pan on a wire rack. Stir in cherries, apricots, and raisins.
