Applesauce Spice Muffins

Of all the apple muffin recipes, this is one of the lightest and tastiest. It comes from Thornbury, Ontario, in the heart of Georgian Bay apple country.
Ingredients:
1/2 cup butter
1 cup firmly packed brown sugar
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/2 cup raisins or 1/2 cup currants
1/2 cup chopped almonds, pecans or 1/2 cup freshly shelled walnuts
1 cup unsweetened applesauce
2 tablespoons granulated sugar
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
Directions:
1. Grease or line 12 large muffin cups and set aside.
2. In a large bowl, cream together butter and brown sugar; beat in egg.
3. Stir together flour, baking powder, soda, salt, cinnamon and nutmeg.
4. Combine with raisins and almonds.
5. Stir dry ingredients into the batter in 3 parts, alternating with the applesauce in 2 parts.
6. Mix just until blended.
7. Transfer to muffin cups, almost filling each cup.
8. TOPPING: Combine all topping ingredients and spoon equally over muffins.
9. Bake at 375 F.
10. for 20 minutes or until well risen and firm to the touch.
11. Let cool on a rack and serve for breakfast or snacks.
