Applesauce Spice Cake

A year round favorite. Made with or without nuts. Tasty and sweet.
Ingredients:
1 c unsalted butter
2 c sugar
3 c cake flour
3 extra large eggs
2 c natural apple sauce
1/4 c buttermilk
1 c chopped pecans
1 c golden raisins
1 t vanilla
1 t cinnamon
1 t ground nutmeg
1/2 t ground allspice
1/2 t ground cloves
1 3/4 t baking soda
1/2 t salt
Directions:
1. Preheat oven to 350*F.
2. Cream butter and sugar in a mixer fitted with a paddle.
3. Sift together the flour, baking soda, salt, cinnamon allspice, nutmeg and cloves.
4. Remove about 1/4 cup of flour mixture to a separate medium bowl.
5. Fold the applesauce into the cream butter sugar mixture. These ingredients will not mix completely.
6. Fold in half of the flour mixture to the bowl.
7. Lightly beat together the eggs, vanilla and buttermilk. Mix into the batter.
8. Add the remaining flour and fold in gently.
9. Place the nuts and raisins into the reserved 1/4 cup flour mixture, mix to coat.
10. Gently fold the nuts and raisin into the batter.
11. This will make about 24 cupcakes, 1-9x13x2 or 2-8x8x2 cakes
12. Grease and flour pans or use cupcake liners
13. Bake for 25-30 min. Cake is done when a toothpick comes out clean.
14. I just came up with this one tonight. I made cupcakes. They turned our great, very tender and tasty. I will post the Maple Brown Sugar Frosting after I have tinkered with it a bit.
