Many years ago, a new neighbor invited me for coffee. She served this delicious, moist cake and a few days later I asked her for the recipe. She wrote it by hand on a sweet little recipe card, which I still have. And 16 years later, she is my dearest friend.
Ingredients:
1/2 lb unsalted butter
2 cups sugar
2 cups applesauce
3 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup raisins
Directions:
1. Preheat oven to 325. Butter and flour a 10-inch tube pan.
2. Cream butter and sugar until light and fluffy. Stir in applesauce and vanilla.
3. Sift dry ingredients together and then sift over applesauce mixture. Sprinkle with raisins and blend gently.
4. Pour batter into pan and bake approximately 65-75 minutes or until a toothpick inserted in the center comes up clean. Cool in pan 10 minutes then remove from pan to finish cooling.
