Applesauce Nut Crumb Cake |

This is easy to prepare and is good for all of you on weight watchers. Each serving is 4 points. The original recipe called for pecans but I used walnuts. You can substitute your favorite. Ingredients:
1 1/2 cups all-purpose flour |
1/2 cup packed brown sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/2 cup low-fat buttermilk |
1/2 cup applesauce |
1 tablespoon butter or 1 tablespoon margarine, melted |
1 large egg |
1 large egg white |
cooking spray |
1/3 cup chopped nuts, of your choice |
1/3 cup all-purpose flour |
1/4 cup packed brown sugar |
2 teaspoons butter or 2 teaspoons margarine, melted |
1/2 teaspoon ground cinnamon |
Directions:
1. Preheat oven to 350 degrees F. 2. In a large bowl, combine first six ingredients (flour through nutmeg). 3. In a separate bowl, mix buttermilk, applesauce, 1 Tbsp butter, egg and egg white. 4. Make a well in the center of the dry ingredients and stir in the wet mixture until moist. 5. Spray a 9 round cake pan with cooking sptay. 6. and spoon in the batter. 7. In a small bowl combine chopped nuts and remaining ingredients. 8. Stir with a fork until the mixture resembles coarse meal. 9. Sprinkle evenly over top of the cake. 10. Bake at 350F for 35 minutes or until a wooden toothpick inserted in the center comes out clean. |
