I don't call this a fruitcake although made with candied fruit! When my kids were small they hated any fruit cake because of the sticky candied fruit and peel that was used in making the cakes. Hubby and I love fruit cake. Read more . So I had to compromise and make something the kids would love and not associate as a typical fruit cake. Thus this recipe was born. Its a basic pound cake recipe with finely chopped candied fruit, peel, and nuts and raisins.However not your typical poundcake texture . You'll have to try it to see what I mean. Its a good keeper and very moist and freezes well. Let flavors mellow overnight before cutting. It's great plain and one may dust with powdered sugar instead of the icing. It's also a great way to use leftovers such as applesauce, candied fruit, nuts and raisins and great for the new year too To achieve the proper texture the kids likes, I had to place the candied peel in my food processor and chop it up almost to the point where it turned into a paste but still kept the colors and much smaller pieces of fruit and peel. Ingredients:
bowl 1
2 cups plain applesauce
1 cup raisins ( dark )
1/2 cup chopped nuts ( walnuts )
1 container candied fruit and peel , 16 oz ( see directions )
bowl number 2
3 cups flour
1 tsp baking soda
2 tsp baking powder
1/8 tsp ground nutmeg
bowl 3
2 sticks softened butter
2 cups sugar
1/4 cup full fat plain yoghurt or sour cream
2 tsp vanilla
icing: optional
1/2 stick butter softened
'1 1/2 cup powder sugar or as needed
1 tbs cream
1 tsp vanilla or tuitti fruiti extract
coarse white sugar crstals
Directions:
1. Note: preparation is atypical for this delcious cake!
2. Use the metal blade in heavy duty food processor and pulse on and off to chop the fruit into smaller pieces.
3. Do not over pulse or the fruit will turn to a paste!
4. Place the chopped fruit in a bowl with the applesauce, nuts and raisins and set aside
5. Bowl 2:
6. Cream butter smooth and then cream in sugar till fluffy.
7. Blend in the eggs and then the yoghurt, stir in the vanilla
8. Bowl 3:
9. sift the flour, baking powder and baking soda and nutmeg into a bowl
10. Place all of the dry mixture into the creamed mixture.
11. Add the fruit-applesauce mixture into the bowl
12. With electric mixer slowly mix everything together until the mixture is well blended
13. Place this mixture into a greased and floured tube pan lined with papered baking circle and grease paper.
14. Bake 350F middle rack about 70 to 90 minutes or until cake tests done with a toohpick.
15. Remove cake to rack to cool
16. After 15 minutes, carefully invert to remove cake and then reinvert and cool completely
17. When cool, wrap overnight to mellow flavors or freeze
18. Frost or dust with powdered sugar on cooled cake
19. Mix frosting inegrdients if desired and frost top of cak
20. then sprinkle top with coarse crytal sugar if desired
