White Cheddar cheese is the key ingredient in this recipe. It complements the tartness of the apple and the sweet flavor of the ham.
Ingredients:
4 cups torn curly leaf lettuce
4 cups torn boston lettuce (about 2 small heads)
8 ounces cubed lean ham
1 small red delicious apple, chopped
1/4 cup raisins
3 tablespoons apple juice
2 tablespoons cider vinegar
1 tablespoon light honey mustard
2 teaspoons vegetable oil
1/8 teaspoon freshly ground black pepper
1/2 cup (2 ounces) reduced-fat shredded white cheddar cheese
Directions:
1. Combine first 5 ingredients in a large bowl.
2. Combine apple juice and next 4 ingredients in a small bowl; stir with a whisk. Pour over lettuce mixture; toss well to coat. Spoon salad mixture onto 4 individual salad plates. Sprinkle 2 tablespoons cheese over each salad.
