Apple Walnut Scone With Ricotta

Healthy alternative great for quick snack or breakfast on the go
Ingredients:
1 large apple, skin on, grated (seeds removed)
1 egg
1/2 cup ricotta cheese
1/4 cup sugar
1 tablespoon stevia
1 teaspoon vanilla
3/4 cup walnuts, rough chop
3/4 cup ground flax seeds
2 teaspoons cinnamon
2/3 cup whole wheat flour
2/3 cup oat bran
2/3 cup all-purpose white flour
1/2 teaspoon salt
3/4 teaspoon baking soda
2 teaspoons baking powder
1/4 cup butter
Directions:
1. Mix together first 9 ingredients, blending well.(apple through cinnamon).
2. Stir together flours, oat bran, salt, baking soda and baking powder.
3. Cut butter in to the flour mixture.
4. Stir wet ingredients into dry ingredients, mix well.
5. Put dough (will be stickie) on floured surface and pat out into a large circle.
6. Cut into 8 servings and transfer to greased baking sheet.
7. Bake at 375 for 20-23 minutes.
