Apple & Walnut Muffins

Another nice muffin to have with a cup of tea or coffee. I like to butter mine :)
Ingredients:
1 3/4 cups self raising flour
3/4 teaspoon baking soda
1/4 teaspoon cinnamon
3/4 cup sugar
2 eggs
1/2 cup oil
1 teaspoon vanilla
1/2 cup walnuts (roughly chopped)
1 1/2 cups grated apples
Directions:
1. Mix together the flour, baking soda, and cinnamon.
2. Stir in the sugar.
3. Beat oil, eggs and vanilla together and add to dry ingredients.
4. Add walnuts and grated apple.
5. Stir to just moisten. Do not overmix.
6. Add mix evenly to a 12 hole muffin pan.
7. Bake at 190'C for 15-20 minutes.
8. Remove from oven and leave in muffin pan for 10 minutes before turning out onto a wire rack.
