low fat, high protein salad 1/2 cup dry chickpeas is about 2 cups canned 1 cup dry kidney beans is about 2 coups canned
Ingredients:
2 apples, diced
500 g green beans
1/2 cup dry chickpeas
1 cup dry kidney beans
2 celery stalks, diced
1 tbsp extra virgin olive oil
3 tbsp apple cider vinegar
2 tbsp honey
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dijon mustard
2 tbsp shallot, minced
1/2 tsp anise seed
Directions:
1. cook the green beans
2. mix the apples, beans, and celery together
3. mix the dressing together
4. pour dressing over the salad and toss well to combine
