Apple-Stuffed Poppers

Ingredients:
about 25 jalapeno peppers
4 tablespoon(s) butter
1/2 cup(s) breadcrumbs
2 apples, skin on, cored and finely chopped
1 medium onion, finely chopped
1 to 1 1/2 tablespoon(s) cajun seasoning, to taste
water as needed
Directions:
1. Heat oven to 350 degrees. Lightly oil a baking sheet.
2. Slice jalapenos in half lengthwise and remove seeds. Set aside.
3. Heat a frying pan to medium and add butter.
4. When butter is melted, stir in breadcrumbs and mix well.
5. Add remaining ingredients (except jalapenos) and mix to combine. Cook, stirring, about 3 minutes, to slightly soften onions. Add water a tablespoon at a time if mixture seems dry.
6. Tightly fill each jalapeno half with stuffing, mounding slightly. Place on pan, filling side up, and bake 25 to 30 minutes, until softened and browned. Cool slightly before serving.

8.  To broil, place filled jalapenos on lightly greased broiler pan. Broil about 6 inches away from the heating element for about 10 minutes, until bubbly, watching carefully to avoid burning and loss of filling.
9.  To grill, lightly grease bottoms of jalapenos and grill over medium to medium-low heat until bubbly and softened, about 10 minutes. Watch carefully to avoid burning and loss of filling.
10.  To cook in a skillet, heat a thin film of oil in a skillet over medium-low heat. Add jalapenos and cover. Cook until bubbly and softened, 10 to 15 minutes. Watch carefully to avoid burning and loss of filling.
