Just made this from a recipe in a magazine, and the family all liked it, being a not-too-sweet and soft slice. Also, the ingredients are readily available, and it's pretty easy to make.
Ingredients:
180 g butter, softened
3/4 cup caster sugar
2 eggs, lightly beaten
1 1/2 cups plain flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 large granny smith apple, peeled and cored
1/4 cup brown sugar
1/4 cup plain flour
1 teaspoon ground cinnamon
30 g butter, softened
Directions:
1. Preheat oven to 180 degrees celcius.
2. Grease and line a 3x18x28cm slab pan with baking paper.
3. Using an electric mixer, cream butter and caster sugar until pale and creamy.
4. Mix in the egg in two batches.
5. Sift flour, baking powder, and cinnamon over the butter mixture. Fold through with a large metal spoon.
6. Spread the mixture evenly in the pan. Top with diced apple.
7. Make the streusel topping: Combine brown sugar, flour and cinnamon in a bowl. Rub in the butter using your fingers until clumps form. Crumble the topping over the slice.
8. Bake for 45-50 minutes until golden and an inserted skewer comes out clean.
9. Cool in pan, then cut into squares to serve. Would go well with vanilla ice-cream.
