You can make this recipe vegan by substituting soy milk for the regular milk.
Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup rolled oats
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1 cup skim milk
1 cup applesauce
1 tsp vanilla
Directions:
1. Combine all dry ingredients in a large bowl and stir together. Add in milk, apple sauce and vanilla and stir until just smooth.
2. Preheat waffle iron, grease well with cooking spray (even if it's nonstick) and cook waffles according to the manufacturer's instructions.
3. Serve immediately, with plenty of syrup.
