THIS DISH HAS ALKWAYS BEEN A FAVOURITE AS I LOVE ANYTHING WOITH LOTS OF FRUIT.
Ingredients:
1 lb. cooking apples
2 oz. bicarbonate of soda
2 eggs
1/2 oz. sugar
pinch of salt
2 tabpn water
4 sponge cakes
smallish ones, like sponge fingers
1/2 pint of milk
4 drops of vanilla essence
1 oz. caster sugar
Directions:
1. STEW THE APPLES, CUT FINELY, WITH THE WATER AND SUGAR.
2. CUT SPONGE CAKES IN HALF AND ARRANGE IN A DISH.
3. PUT THE EGG WHITES IN A LARGE CLEAN BASIN.
4. PUT THE YOLKS IN A SMALL BASIN.
5. HEAT THE MILK TILL JUST BOILING AND ADD TO THE EGG YOLKS.
6. RETURN THE CUSTARD TO THE PAN AND STIR OVER A LOW HEAT TILL SET.
7. PUT THE STEWED APPLES OVER THE SPONGES.
8. COVER WITH THE CUSTARD AND ALLOW TO SET AND GO COLD.
9. BEAT THE WHITES OF THE EGGS TO A MERINGUE ADDING THE VANILLA ESSENCE AND CASTER SUGAR, BEATING STIFFLY/
10. ARRANGE ON AND AROUND THE APPLE DISH.
11. PLACE IN A COOLISH OVEN FOR 10 MINUTES TO SET THE MERINGUE.
