I found this recipe in Spry magazine. It was submitted by reader Bonnie Vonbergen. the cake is moist and full of fiber. It gets its sweetness naturally - from honey.
Ingredients:
1 1/2 cups whole wheat flour
3 tablespoons natural bran
1 1/2 teaspoons baking soda
3/4 teaspoon ground cinnamon
3/8 teaspoon ground nutmeg
3 cups apples, shredded
1 cup honey
3/8 cup safflower oil
3/4 cup nuts (optional)
2 eggs, well beaten
3/4 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F; spray a 9x13-inch baking pan with cookijng spray.
2. In a large bowl, combine flour, bran, baking soda, cinnamon, and nutmeg; stir in honey, oil, and eggs.
3. Add vanilla, apples, and optionally, nuts; mix well.
4. Bake until toothpick inserted comes out clean, about 35 minutes.
