Super Quick. Omit the pecans and blue cheese for a more kid-friendly fruit salad.
Ingredients:
4 cups diced red delicious apple (about 2 medium)
1 1/2 cups seedless green grapes, halved
1/2 cup finely chopped celery
1/2 cup finely shredded carrot (about 1 medium)
3 tablespoons fresh lemon juice
1/4 cup plain fat-free yogurt
3 tablespoons honey
1/4 cup chopped pecans, toasted
1/4 cup (1 ounce) crumbled blue cheese
Directions:
1. Combine first 5 ingredients in a large bowl, and toss well. Combine yogurt and honey in a small bowl; stir with a whisk until well blended. Pour over apple mixture; toss gently to coat. Sprinkle with pecans and blue cheese.
