We have 30 apple trees, so I am always looking for new recipes to us them. This is a favorite of my kids. Adapted from Quick Cooking. Cooking time does not include chilling time.
Ingredients:
2 cups apple juice
1 1/2 cups chopped peeled tart apples (about 2 medium)
1 cup uncooked instant brown rice
1/2 cup raisins
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup splenda granular, sugar substitute
6 tablespoons reduced-fat whipped topping
Directions:
1. In a saucepan, combine the first six ingredients and bring to a boil.
2. Reduce heat, cooking and stirring for 6-7 minutes or until most of the liquid is absorbed and rice is tender.
3. Remove from the heat and mix in Splenda.
4. Refrigerate for 1 hour.
5. Garnish with whipped topping if desired.
