This is a recipe that I made up, based on a few ideas from other tenderloin recipes. I think the taste of apple blends wonderfully with pork, so that was my inspiration.
Ingredients:
1/4 cup apple cider vinegar
1/4 cup water
1/8 cup sugar
1 1/2 lbs pork tenderloin
2 slices bacon (i use maple bacon)
1 medium granny smith apple, cored and sliced
1/4 cup raisins
1/4 cup pine nuts
2 teaspoons brown sugar
Directions:
1. Preheat oven to 350°F.
2. Most tenderloins of this size will come in two pieces. Wrap each piece with a slice of bacon and place in a loaf pan or other similarly-sized dish.
3. Mix vinegar, water, and sugar until blended and pour over tenderloin.
4. Arrange apple slices along the end of the pan and between the two pieces of tenderloin.
5. Sprinkle raisins, pine nuts, and brown sugar on top of the pork.
6. Cover with foil and bake for 45 minutes. Uncover and bake for another 15 minutes.
7. Let cool slightly and serve!
