One of my favourite apple pie recipes that makes enough for a small crowd! The exact number of apples needed depends on the size of the apples used - you need enough apple slices to cover the whole 30 cm x 40 cm pie. Instead of sliced apples you can also use applesauce and mix it into the quark mixture.
Ingredients:
800 ml all-purpose flour
300 ml sugar
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons vanilla sugar
250 g butter, melted
2 large eggs
200 ml buttermilk
2 eggs
500 g quark
200 ml sugar
2 teaspoons vanilla sugar
1 lemon, juice of
1 lemon, zest of (optional)
6 -10 apples
Directions:
1. Preheat oven to 200°C.
2. Line a 30 cm x 40 cm pan with parchment paper.
3. Mix flour, sugar, baking powder, baking soda and vanilla sugar in a large bowl.
4. Add melted butter and mix to combine.
5. (If you are using vanilla extract instead of vanilla sugar, add it with the melted butter.).
6. Transfer half of the dough into another bowl.
7. Add eggs and buttermilk to one half of the dough and mix to combine.
8. Pour this dough onto the prepared pan and spread evenly.
9. To make filling: Lightly whip the eggs to break their structure.
10. Add sugar, vanilla sugar, quark and lemon juice (and zest, if using), mix well.
11. Pour the quark mixture on top of the dough in the pan.
12. Peel, core and slice apples.
13. Arrange apple slices on top of the quark layer, covering the whole pie.
14. Sprinkle the reserved half of the dough on top of apple slices.
15. Bake in the preheated oven for 30 minutes.
