This is an incredible cheesecake. I got this recipe from an estate sale wherein I purchased the family collection of recipes. The notation on the recipe card says this was a family favorite and Jeannie's specialty . Read more . It takes a little effort to make, but well worth it. Enjoy
Ingredients:
1 cup graham cracker crumbs
2 tablespoons granulated sugar
2 tablespoons butter
1/4 cup butter
1/2 cup light brown sugar
2 pounds red delicious apples peeled
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
topping
1-1/2 cups dark brown sugar
1/2 cup butter softened
1 cup pecan pieces

16 ounces cream cheese softened
1/2 cup granulated sugar
3 large eggs
1 cup heavy whipping cream
Directions:
1. Melt butter then stir in crumbs and sugar until thoroughly blended.
2. Press into the bottom of a springform pan then set aside.
3. Melt butter over low heat then add brown sugar, apples, cinnamon, nutmeg and allspice.
4. Simmer over low heat until apples are soft then cool mixture to room temperature and reserve.
5. In small bowl mix all topping ingredients together with fork until well incorporated then reserve.
6. Cream together sugar and cream cheese on medium speed until light and fluffy.
7. Beat in eggs one at a time until smooth.
8. Add cream and continue beating until mixture is thick and creamy.
9. Gently stir in cooled apple mix by hand then pour into prepared spring form pan.
10. Spread praline topping over top then bake at 350 for 1 hour and 20 minutes.
11. Allow to cool to room temperature before removing sides of the pan.
12. Refrigerate until ready to serve then garnish with whipped cream.
