All the flavours of apple pie, in an easy to carry, super-moist muffin form. Low in fat but definitely high in flavour with a great nutty crunch topping. Makes BIG muffies!!
Ingredients:
topping
1/4 cup packed brown sugar
1/4 cup chopped almonds
1/4 cup chopped peanuts
1/3 cup oatmeal
1 tsp cinnamon
2 tbsp butter, melted
cake
1 1/4 cups flour
1 cup whole wheat flour
1 tsp baking soda
1/2 tbsp baking powder
1/4 tsp salt
2/3 cup packed brown sugar
1/2 cup skim milk
1/2 cup low-fat sour cream
1/3 cup applesauce
1/2 tbsp apple cider vinegar
1 tbsp oil
1 tsp vanilla
3 cups grated apples
1 apple, cut in small dice
Directions:
1. In bowl, stir together brown sugar, nuts, oats and cinnamon.
2. Drizzle with butter, tossing with fork. Set aside.
3. In large bowl, combine flours, baking soda and salt. Whisk together sugar, milk, sour cream, applesauce, vinegar, oil and vanilla.
4. Pour over dry ingredients and fold until semi-blended.
5. Sprinkle with all the apples and fold in gently.
6. Spoon into prepared muffin cups and sprinkle with topping.
7. Bake in 375 F oven for about 25 minutes or until tops are firm to the touch.
