MY AUNT gave me this recipe and it is a wonderful fall dessert for two or more. It tastes like apple pie, yet is less time consuming to prepare. With the special touch of the butter sauce, it receives raves for taste and a delightful surprise flavor addition.
Ingredients:
1/4 cup butter, softened
1/3 cup sugar
1 egg
1/2 cup king arthur unbleached all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup chopped tart apple
1/4 cup chopped walnuts
butter sauce:
1/4 cup sugar
1-1/2 teaspoons cornstarch
1/8 teaspoon salt
1/2 cup water
1 tablespoon butter
1/2 teaspoon vanilla extract
Directions:
1. In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt, cinnamon and nutmeg; add to creamed mixture and mix well. Stir in apple and walnuts.
2. Transfer to a greased 7-in. pie plate. Bake at 350° for 25-35 minutes or until a toothpick inserted near the center comes out clean.
3. In a small saucepan, combine the sugar, cornstarch and salt. Gradually stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and vanilla. Serve warm with dessert. Yield: 2 servings.
