The fruit is tender and moist, and the crunchy topping is not overly sweet in this dish. Delicious alone, it's even more delightful served with vanilla ice cream on the side.
Ingredients:
1 medium apple, peeled and chopped
1 medium ripe pear, peeled and chopped
1 tablespoon brown sugar
2 teaspoons king arthur unbleached all-purpose flour
1-1/2 teaspoons lemon juice
1/2 teaspoon apple pie spice
topping:
1 tablespoon king arthur unbleached all-purpose flour
1 tablespoon butter, melted
1 tablespoon brown sugar
1/4 teaspoon apple pie spice
1/3 cup old-fashioned oats
2 tablespoons chopped pecans
Directions:
1. In a small bowl, combine the first six ingredients. Divide between two greased 8-oz. ramekins.
2. In a small bowl, combine the flour, butter, brown sugar and pie spice; stir in oats and pecans. Sprinkle over fruit mixture.
3. Bake at 375° for 18-22 minutes or until bubbly and golden brown. Serve warm. Yield: 2 servings.
