Apple Pancakes With Cider Syrup

Ingredients:

  • 4 cups pancake or biscuit mix
  • 1 tsp cinnamon
  • 2-2/3 cups milk
  • 1-1/2 cups chopped apples
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 cups apple cider
  • 2 tbsp lemon juice
  • 1/4 cup butter

Directions:

  1. ~*PANCAKES:
  2. Mix all ingredients together. Fry in hot pan or on hot griddle, as you normally would make pancakes.
  3. ~*SYRUP:
  4. In a medium saucepan, mix together sugar, cornstarch, cinnamon, and nutmeg. Turn to medium heat and gradually add apple cider and lemon juice, whisking often. Bring mixture to a boil – boil and whisk for 1 minute. Remove pan for heat. Add butter, whisking until fully melted and incorporated into the mixture.
  5. Serve syrup hot over apple pancakes.
