These are really good pancakes. I got this recipe from a rogers flour cook book and its been a favorite ever since. I usually double this recipe. and freeze the left overs, the kids love them reheated in the toaster.
Ingredients:
1 cup whole wheat flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 egg (beaten)
1 cup milk
1 teaspoon lemon juice
2 tablespoons vegetable oil
1 cup apple (grated)
1/2 cup blueberries (optional)
Directions:
1. Mix all ingredients in a large bowl.
2. Cook on a griddle.
