Apple Oatmeal Pecan Cookie

Ingredients:
2 1/4 cup(s) all-purpose flour
1 cup(s) light brown sugar
1/2 cup(s) granulated sugar
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3/4 teaspoon(s) cinnamon
3/4 teaspoon(s) nutmeg
1/2 cup(s) grapeseed oil
7 tablespoon(s) pasteurized egg whites
2 teaspoon(s) vanilla flavoring or extract
2 cup(s) oatmeal not the quick cooking oats
2 cup(s) apples diced into small pieces
1 1/2 cup(s) raisins
1/2 cup(s) pecans - finely chopped
Directions:
1. Line your cookie sheet with Parchment Paper.
2. Mix together all dry ingredients.
3. Add wet ingredients and mix well. I use my kitchen aid for this.
4. Now add in the Pecans Raisins and Oatmeal. Mix well.
5. Don't worry if dough seems a bit stiff and perhaps even crumbly.
6. Now add in the Diced Apples. (I used a tart apple due to the sugar in the recipe. Nice balance of taste and flavor) Mix well.
7. **This is very important, refrigerate for at least 2 hours. This is important as this allows flavors of the cinnamon, nutmeg, oats and apples to blend.
8. Worth the wait. You won't be disappointed.
9. Preheat oven to 350 degrees.
10. Drop by small tsp (I use a small ice cream scoop with a release) onto lined cookie sheet.
11. Bake for 9-12 minutes (depending upon oven)
12. Remove cookies from oven when lightly brown.
13. While still hot, and this is optional, using the back of a tsp. very lightly, flatten the tops of cookies just a bit so they aren't puffy. I do this because I don't like cake like cookies. This will flatten the cookies just a bit, but will make them appear a bit thicker as well.

16. Each cookie is 2.81 grams of fat. It is a very healthy fat from the Grapeseed Oil. I use the GrapeOla Brand.
