Apple Nut Pancakes (Vegan)

Delicious for fall, winter, or whenever!
Ingredients:
1 cup whole wheat flour
1 tablespoon whole wheat flour
1 tablespoon white sugar
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon vanilla extract
3/4 cup apple cider (or juice)
1/4 cup soymilk
1/4 cup pecans, chopped
1 granny smith apple, peeled cored and diced
Directions:
1. Stir together dry ingredients in a large bowl (flour through allspice).
2. Make a well in the center and add vanilla, cider, and soy milk, stirring just until blended.
3. Stir in nuts and apples.
4. Heat a large skillet over medium heat and add oil or cooking spray.
5. When hot, pour 1/3 cup batter on skillet. Cook until bubble appear and then flip.
6. Serve warm with maple syrup or honey.
